Blackened Salmon with Avocado Lime Salsa



INGREDIENTS

4 Salmon Filets (I get my Salmon from Sam's Club in the frozen section- it's wild caught atlantic skinless and the entire pack comes with about 8 center cut filets) 

Blackened Seasoning:

1 Tbsp Paprika
1 tsp Pepper
1-2 tsp of salt (depending on how salty you like it, I do not think 2 tsp's is overbearing)
1 Tbsp Oregano
1 tsp Garlic powder
1 tsp Onion powder
1/4 tsp Cayenne Pepper 
1 tsp Chili Powder

Avocado Salsa:

1 ripe Avocado
Corn relish- Homemade, or store bought- I buy mine from Sam's Club in the Frozen section it comes with 6 bags of individual packs of southwest corn mix (corn, onions, peppers, and black beans) you put it in the microwave for approx. 5-6 minutes- Super easy!
Juice of 1/2 Lime

INSTRUCTIONS

1. Thaw Salmon (unless using fresh) and pat dry. Season both sides of Salmon generously.
2. Dice avocado and mix approx. 4 Tbsp corn relish/southwest mix + Juice of 1/2 lime together
3. Heat 1 Tbsp of Olive oil in a non-stick pan on med-high heat and add the first two pieces of Salmon. Cook salmon for approx 3-4 minutes per side. You will start to notice a light pink line midway through the Salmon and thats when you're ready to flip. Sometimes the Salmon gets blackened too quickly so if you have the blackened color you want remove Salmon from heat, place in plate and cover with foil to finish cooking. 
4. You do not have to add rice if you do not want to but working out makes me need those extra carbs. I use the frozen brown rice from Trader Joes. It is literally the easiest rice you will EVER make. You put it in the microwave for 3 minutes and boom! You have the perfect rice and it isn't loaded with all the sodium of products like Ben's easy rice. I hated cooking rice before but now I don't have to!
5. Place rice on plate, add Salmon over rice then top with Avocado salsa.
